HRS §159-6

Who runs the meat inspection program

The department runs this program under the board's watch. The board can hand over most of its jobs to agents or staff, but cannot give away its rule-making power. It can hire vets and inspectors to check meat statewide, and those inspectors must answer to a board-employed vet.
